A friend of mine posted in Facebook her pizza rolls. She said she found the recipe on Pinterest. So I searched pinterest and found this recipe. Is was so easy. I used what I had around the house to make it work. This pan is larger than a 13X9... and part of them are just cheese rolls.
Ingredients:
1 bag turkey pepperoni
3 canisters of regular refrigerator biscuits
8-10 cheese sticks cut into 4ths
1 stick of butter (melted)
2-3 Tbsp italian seasoning
Directions:
Prepare 13X9 baking dish by spraying with non-stick spray. Preheat oven to 375F. Open the first canister of biscuits. take one of the biscuit rounds and flatten with fingers and insert 2 pepperoni, then 1/4 of a cheese stick and 2 more pepperoni's. Wrap the biscuits around the pepperoni's and cheese. place seam side down in a 13X9 baking dish. Repeat process until pan is filled. Spoon melted butter on tops of the prepared biscuit rounds. Then sprinkle with italian seasoning.
Bake in 375F oven for 15 min or until golden brown.
Serve with favorite marinara sauce.
Verdict... Now a new item on my menu. My children loved them so much there were no leftovers and the kids were asking if I had any more. Total hit here! I hope you love them too. Thanks :)

Veggie Supreme Pizza

I made homemade bread last night. I have the recipe on my blog here. Now this recipe is very versetile but is an all day process. So be warned... It is so worth it. You can make this dough and freeze it, pre-bake some of the crusts and freeze them for another day.. What ever. So here is what I made.
Ingredients:
6-7 baby portabella mushrooms, sliced
1/2 onion, diced
1/2 red bell pepper, diced
1 fresh roma tomato, sliced and then cut in half
2 cups fresh spinach
1/2 cup ricotta cheese
1/2 cup shredded mozorlla cheese
1/2 cup shredded cheddar cheese
3-4 fresh basil leaves, chopped
1-2 tsp minced garlic
1/2 cup to 1 cup of garden combination Ragu spaghetti sauce. (to create a light sauce layer)
1 pre-baked crust using my bread recipe
sprinkle parmesan cheese and italian seasoning
2 dashes of cooking white wine
salt and pepper
1/4 stick of butter
Directions:
After you slice all of your vegetables, set aside. In a small skillet melt 1/4 stick of butter, when nice and bubbly then add the mushrooms and onions. saute... while saute'ing them sprinkle with salt and pepper. Then add a dash or two of cooking white wine, continue to saute' until all the liquid has been absorbed or evaporated. Mushrooms will be a nice flavor and onions will have a translucent sheen. Set aside.
1. Spread lightly the spaghetti sauce, then sprinkle with minced garlic.
2. Add the mushroom/onion mixture, spreading evenly on top of the crust.
3. Next add the diced bell pepper and then layer the spinach.
4. On top of the spinach add the tomato sliced in a layer on top of the spinach. Next sprinkle with cheese on top.
5. spoon pieces of ricotta cheese on top of the cheese layer and sprinkle the chopped basil.
6. sprinkle with italian seasoning and parmesan cheese.
Bake in a Preheated 425F degree oven for 12-14 minutes until golden brown crust and melted cheese on top.
I only have three pieces of this pizza left that I'm going to have for lunch today. My husband ate some too... This was very tasty and beautiful. The bread recipe is very versatile and can be substituted for just about any kind of bread type item you want. I was cooking so much that my rolls went flat. So I baked them anyways and they will be turned into croutons with some olive oil and seasoning. Get creative and have fun. Let me know how you liked this pizza recipe :)

Cheeseburger Tortilla Pizzas
Tonight I needed to make pizza since tonight is pizza night. I wanted a change from the typical pizza. I didn't feel like making my own pizza dough and I am trying to save money and use what is in my house. I had a few packs of tortillas and some leftover meat and toppings from dinner last night. I thought... Cheeseburger Tortilla pizzas... And then I decided to google tortilla pizzas to see how others made theirs. I read a few that mentioned brushing some olive oil on the tortillas and then bake them in the oven for 400F for 3-5 minutes. So I followed that step. Then I followed my own way. Here is what I did.Ingredients:
3 precooked hamburger patties roughly chopped
1 tomato
1 diced onion
5 cheddar slices of cheese diced or shredded
1/2 can of spaghetti sauce
1/4 head of lettuce
6 flour tortillas
olive oil
Lightly brush olive oil on flour tortillas and bake in the oven for 3-5 minutes at 400F. (Tortillas will puff up, just keep them from browning). Remove from the oven
and top with spaghetti sauce, tomato, onion, and cheddar dices.

Bake in the oven for 10-12 minutes at 400F. Remove from oven when the and use your pizza cutter and slice into 4 pieces. Top with shredded lettuce and eat.
Verdict..

Very tasty, I had two of these, the tortilla was like a thin crust pizza. Very tasty. I bribed my kids with chocolate ice cream if they eat it without too much trouble... It worked. they ate their own 4 slices of pizza. It was nice. The ice cream was a nice treat too. I hope you try this, I will definitely do this one again, but next time might be Taco tortilla pizzas... Enjoy.

Homemade Pizza Dough - Bread maker style

Ok, so I guess it's cheating a little, maybe, well, maybe not. I utilized my bread maker today to make my pizza dough recipe. Can I just say... I LOVE MY BREAD MAKER!. I've had it since my bridal shower over 12 years ago. It was a gift from my mother-in-law. She knew how much my husband loved BREAD so she wanted to make sure he could have homemade bread when ever he wanted.
Let me just say, that when I've made bread in this bread maker, I can't get it to work out right. But I can do the dough. The other thing is that my husband can get this bread maker to work GREAT. I think that's funny. I make the dough stuff, he makes the bread. :) but I prefer to make bread the old fashioned way, using my hands. That being said. I made homemade pizza dough. It is from the recipe book that came with the bread maker. 









***Added to my bread maker in the order listed. It requires liquids first then dry.
Ingredients for double crust recipe:
1 1/4 cups + 1tbsp water 80F or (10 1/2 oz)
4 Tbsp vegetable oil
4 cups all purpose flour
1 tsp sugar (still our of white, used 1 1/2 tbsp brown sugar)
1 tsp salt
2 1/2 tsp active dry yeast or 2 tsp fast rise yeast
**Optional (I always add)**
3 Tbsp italian seasoning
3 Tbsp Garlic powder (not salt)

Then I place the pan in my bread maker and 1 hr and 4o min. It's a great pizza dough. Once it's done in the bread maker, knead about 1 min. let rest 15 min.



Roll dough out to fit a 12-14 inch pizza pan Place dough into greased pan which has been sprinkled with corn meal. Press dough into pan, forming an edge.
Let dough rise in warm draft free place for 20-25 min.

Spread pizza sauce evenly over crust, then top with favorite meat, toppings and cheese. Bake in a preheated oven 425F oven for 20-25 min or until nicely browned on top, let rest 5 min before cutting.
