Banana Pancakes or 3 Ingredient Pancakes

Banana Pancakes
Aka  3-ingredient pancakes

These pancakes are my second favorite pancakes thus far, in my quest to find the best low carb pancake solution. I know it's crazy that I'm searching for the best pancakes. But it could be worse. :)

These pancakes are moist, and very banana nut bread flavored. I'm thinking a more browned banana would have tasted better. My banana wasn't too soft, these will be great with a bit of walnuts or pecans mixed in or coconut flakes for added texture. I also found this recipe on Pinterest. (are you noticing a pattern here?) These are super fast and easy to make. Great for if your in a rush and don't want to pull out the blender or mixer. These can be quickly made with a fork and a bowl. The flavor is very banana, and it has a kind of spongy texture. I kept thinking while I was eating them that they needed a little something different, maybe I wanted the nut crunch like banana nut bread but these were good and quick. I ate these with just a little butter on each pancake. No syrup or added any thing else.

Ingredients:

1 banana
2 eggs
1/4 tsp cinnamon

Directions:

Mash the banana with a fork, add the eggs and mix together. Add the cinnamon, mix together. Cook on heated griddle until browned, flip, brown and enjoy! :)

Super easy and fast. Enjoy!

Banana Oatmeal Wheat Muffins


I was craving banana muffins today and I had several bananas that were perfect for banana muffins. So I looked on Pinterest here and found a recipe for Banana Oatmeal muffins. I had all the ingredients except for chocolate chips. I know a travesty but none the less, no chocolate chips. :( I thought I could make it a little healthier if I wanted so I made a few changes to the original recipe. Here is what I did. I have the muffins in the oven right now. I tripled the recipe and made 18 muffins and 2 loafs of banana oatmeal wheat bread.

Banana Oatmeal Wheat Muffins


  • 9 mashed bananas (the more ripe the better!)
  • 1 cup vanilla Almond milk (you could use skim but you may want to add a little sweetener)
  • 6 eggs
  • 3 tbsp Baking powder
  • 8 cups (240g) Old Fashion or Rolled Oats
  • 1 cup wheat flour
  • 1 1/2 cup coconut sugar
  • 3 tsp vanilla extract
  • 9 tbsp (42g) mini chocolate chips (optional)
Preheat oven to 375 degrees
Mix all ingredients except the chocolate chips together, and let sit while you prepare the muffin pans.
Spray a muffin pan and/or liners with with non-stick spray.
Stir the chocolate chips into the oatmeal batter.
Divide batter into 15 muffin cups. They should be just about filled.
Bake 20-30 minutes, you’ll see the edges just starting to brown and they will be firm to the touch.
The muffins may stick when hot but are removed easily when cooled for a bit.

*For bread bake for 60 minutes.

Banana Chocolate Chip Bars


I have started a part-time job, so I haven't had much time for cooking from scratch lately, trying to juggle work, school, kids, family you know all the stuff that makes us busy, busy, busy! I have taken advantage of a few extra hours today, since it's stake conference at church. I have made some yumminess to add to my boys lunches this week. I doubled the original recipe, so we could have a few as a snack today and still have some for lunches. I also had 6 bananas that I needed to use.

These bars are moist and delicious. My kids have been begging for more. I guess that's a sign of success! :)

Ingredients:

1 1/2 cup butter or margarine, softened
1 1/2 cup granulated sugar
1 1/2 cup packed brown sugar
4 tsp baking powder
1 tsp salt
2 eggs
2 cups mashed ripe bananas (4-6 medium)
2 tsp vanilla
4 cups all-purpose flour
1 pkg (2 cups) chocolate chips (I used milk chocolate)
1 1/2 cup walnuts (optional - I didn't use any nuts)

Directions:

1. Grease 2 large jelly roll pans 15X10X1 baking pans. set aside. In a medium mixing bowl, beat the butter with an electric mixer on medium to high speed for 30 seconds. Add the grandulated sugar, brown sugar, baking powder, and salt, beat til combined. Beat in the eggs, bananas, and vanilla til combined. Beat in as much of the flour as you can with the mixer. Stir in the chocolate pieces and if desired nuts.
2. Spread the prepared baking pan with the mixture. Bake in a 350F oven about 25 minutes or til golden brown. Cool on wire rack. Cut into bars. Makes a bunch, depending on how big you cut the bars.

This recipe comes from my 1930-2000 Limited Edition Better Homes and Gardens New CookBook. This recipe is already doubled. If you want to make a smaller batch, just cut the ingredient amount in half. This is great for those bruised/ultra soft bananas.

These are nice and moist, so tasty! :)

Banana Oat Cookies


I had several banana's that were turning a yucky brown color, I was almost going to throw them out. Then I found this recipe, and I thought it would be wonderful! I needed a treat for my kids lunches, and I wanted something that was healthier than store bought cookies, and not chocolate chip, as I didn't have any of those. This was perfect!

My two younger children helped making them. They really enjoyed sifting the flour, mashing the banana's and adding the oats to the mixture. It was fun having them help.

Ingredients
1 1/2 cups sifted all-purpose flour
1/2 tsp baking soda
1 tsp salt
1/4 tsp ground nutmeg
1/4 tsp ground cinnamon
3/4 cup shortening
1 cup white sugar
1 egg
1 cup mashed potatoes
1 3/4 cup quick cooking oats
1/2 cup chopped nuts (optional)

Directions:
Preheat oven to 400F (200C)
In a separate medium bowl, sift together the flour, baking soda, salt, nutmeg and cinnamon.
Cream together the shortening and sugar, beat until light and fluffy (about 3 to 5 minutes) scraping sides. Add egg, banana, oatmeal and nuts (optional). Mix well.
Add dry ingredients, mix well and drop by the teaspoon on ungreased cookie sheet

Bake at 400F for 10-15 minutes (depending on your oven) check after 9 minutes to add further time.

Cool on wire rack, store in closed container.

Verdict:
SO YUMMY, they are soft and moist. They taste like banana bread. but in the convenience of a cookie.

I added slivered honey roasted almonds.

Chocolate Chip Banana Bread

Chocolate Chip Banana Bread

Today I made some chocolate chip banana bread loaves. 5 small loaves and 1 medium loaf. I had 9 banana's that needed used. So this was a great idea to use the banana's.

Ingredients:
4 1/2 c all purpose flour
4 1/2 tsp baking powder
3/4 tsp baking soda
3/4 tsp cinnamon (ground)
3 eggs
3 c mashed bananas (9 medium)
2 1/4 c sugar
3/4 c cooking oil
3 tsp finely shredded lemon peel
1 1/2 c chocolate chips

1. Grease the bottom & 1/2 inch up sides of loaf pan; set aside. In a medium mixing bowl combine the flour, baking powder, baking soda, cinnamon, & 1/4 tsp salt (optional). Make a well, in the center of dry mixture, set aside.

2. In another bowl combine the egg, bananas, sugar, cooking oil, and lemon peel. Add egg mixture all at once to dry mixture. Stir til just moistened.

3. Spoon batter into the prepared pan. Bake in a 350F oven 30-35 min for mini loaves or 50-60 for regular loaf, til a wooden toothpick inserted in center comes out clean. Cool in pan on wire rack for 10 min. Remove loaf from pan. Cool on rack. Wrap in syranrap & store over night before slicing
