Potato Rolls


I got this recipe from a sister in my ward. She made these for an activity and I HAD to have the recipe. They are so delicious, soft, and perfect! I thought I had already added this recipe to my collection on here. I guess I didn't, because I can't find it. So, even if it's here, I'll repost. It's worth it. I hope you make these and enjoy them as much as we do.

Potato Rolls
Ingredients:
4 cups hot water
2 Tbsp yeast
1 Tbsp salt
1/2 cup sugar
3 eggs
2 cups potato flakes
1 stick of margarine/butter
4 cups flour
3-5 cups flour

Step 1:
Pour 4 cups hot water into mixer. Sprinkle 2 Tbsp yeast over top of water. Add 1 Tbsp salt. Add 1/2 cup of sugar. (you don't need to stir this. Just sprinkle the yeast over the water evenly, then pour the salt ans sugar over the yeast evenly.  It will force the yeast to the bottom) Let sit for approx 5 minutes, until slightly foamy.

Step 2:
Add 3 eggs, 2 cups potato flakes, margarine or butter, and 4 cups flour - use dough hook - beat 5 min.

Step 3:
Add 3-5 cups more flour. (I usually add 4. If it is humid you may need to add a little more. The dough will be quite sticky, but smooth in appearance.)

Step 4:
Use a plastic spatula to remove dough. Pour into a large tupperware or plastic bowl sprayed with non-stick cooking spray. Cover lightly with lid or plastic wrap that has also been sprayed. Let rise 1 hour.

Step 5:
Sprinkle a little flour over the top of the dough and gently pat down to release some of the air. Divide into 5 portions. Using a lot of flour on your board, pat out or roll out each portion of dough into a circle. Use a pizza cutter to cut it into 8 slices (or triangles). Roll each slice beginning at the large end to make a crescent. Pinch the ends together to make it more round. Place rolls onto greased baking sheet. I fit 20 per 10X15 pan. Batch makes two pans, 40 total. Cover loosely with a cloth, or with plastic wrap sprayed with non-stick cooking spray. Let rise 1 hour. *If you have excessive flour on the rolls, just brush them off with a little pastry brush before baking them.* Bake 400F for 12 minutes. Check bottoms of rolls with a spatula to make sure they are slightly browned.

Tips:
The most important ingredients are yeast and flour. Use SAF Instant Yeast or other good yeast and Unbleached flour.

Dough is very sticky, but that is what makes good rolls. Make sure you beat the dough at least a total of 7 minutes - 5 minutes with first addition of flour, and at least 2 more minutes with second addition of flour.

You can make this recipe into cinnamon rolls, bake at 350F for 20-30 minutes. the higher temperature makes them too tough.

Verdict:

HEAVENLY! absolutely Heaven in a bread! light and fluffy, sweet and mmmm heaven! I have not tried these as cinnamon rolls. I may have to split the batch to make half rolls and half cinnamon rolls. Love these!

St. Patrick's Day Shamrock Rolls

Many of you know by now that I make bread from scratch and I love to utilize my bread maker in a pinch. Well, today was that day I used the bread maker in a pinch. I had to be at the boys school today for several hours, and So when I got home it was too late to start my bread so I started dough in the bread maker. I have a recipe for my bread maker rolls here. I used that recipe to make my shamrock rolls. All I did was add about 6-7 drops of green food coloring to the dough as it mixed together. Then when the bread maker was done, I rolled the dough into small balls and placed them in a muffin pan. Let them rise til about double in size.

Bake in the oven 350F for 12-15 minutes. Browned on top.

I think that next time I will add it to the water in the beginning instead of in the dough stage. But I think they look pretty :)

French Bread, Cinnamon rolls and Focaccia Bread


I have this amazing friend! Her and I make bread about once a week together. This week I have made bread three times. Once with her and twice on my own. My family can not get enough of this amazing bread. My dear friend got this recipe from a friend of her's who served an LDS Mission in France. She got this recipe from a group of French Monks. They believed that the oil, and salt killed the yeast. This is how to make their bread.

This is my favorite bread recipe. My friend who I lovingly borrowed this recipe from, makes pizza crust and bread loafs out of it. I decided today that I wanted to use this for a few different things, so I decided to make cinnamon rolls and focaccia bread out of it after I made three bread loafs... So here is the recipe. I hope you love it as much as I do!

Ingredients
13-14 cups of Lehi Roller Mills unbleached flour (or other unbleached flour high quality)- in utah can be found at Costco.
2/3 cup oil
2 Tbsp Salt
2 Tbsp dry active yeast (Red Star or SAF)
1/2 cup LDS church Dry Milk or 1 cup regular dry milk
6 cups Hot Water
1 cup sugar

Follow the steps exactly -
Directions:

This is what we call the science experiment stage.
1. In a large bowl add 6 cups of hot water, dry milk, sugar and yeast. Using a wire whisk, mix the ingredients until the dry milk completely dissolves. Then add in 6 cups of flour whisking until paper mache' consistency. Then cover the bowl with plastic wrap and let rise aprox 1 hour.

Next...
2. After risen, sprinkle the salt, and pore the oil on the risen yeast mixture. Then mix incorporating the salt and oil. Then gradually work the mixture adding 2 cups of flour at a time until dough starts to form and gets slightly less sticky... remove dough from the bowl onto floured surface, then continue kneeding the dough adding flour until nice light non sticky dough is formed.

then clean the large bowl from earlier, spray with non stick cooking spray, place dough in prepared bowl, cover with plastic wrap and let rise an hour. punch down... turn over

cover again with plastic wrap and let rise another hour, then punch done, turn over.. recover

then let rise another hour... punch down and then
Shape into bread loafs, rolls, cinnamon rolls, focaccia bread or what ever... cover with plastic wrap,

Let rise until double in size. Then bake in an oven 350F for 27 min for loafs, 18 min for rolls.

Remove from oven, spread melted butter on the tops and enjoy!

Cinnamon rolls

After I had three loafs of bread in the pan, I then divided the remaining dough in half. From one half I rolled out the dough to rectangle and spread melted butter cinnamon, a few dashes of cloves, and brown sugar on it, rolled it up along the length of the dough, then cut it with string into aprox. 1 inch wide rolls. Then I let rise until aprox double in size. Then Baked in the oven 350 for 19 minutes. They came out golden brown, Next I got a premade cream cheese icing, thined it out with milk, and drizzled on top. Will serve these cold tomorrow morning. But will be good warmed. Enjoy! :)


Focaccia Bread

With the other half of the dough I tried to flatten out as best I could on a cookie sheet, that had been drizzled generously with olive oil. As I was flattening the dough, I dug my fingers in to rip the dough with my fingers. Then I let rise til puffy and double in size. I sprinkled with rosemary and garlic seasoning, salt and another drizzling of olive oil. Then Baking in the oven 350F for 20 minutes. Until golden brown.

This should be light and fluffy, and full of yummy flavor. Enjoy warm or cold.

Grandma Clark's Dinner Rolls



Bill's Grandma Clark (may she rest in peace) made these amazing dinner rolls, before she passed away, I had the honor of putting together a cookbook of her recipes for the family. It was an amazing experience. The family has this recipe, but it should be shared with the world. These are by far the BEST rolls ever made. Of course, my rolls using this recipe and my father-in-laws rolls using the same recipe come out differently. I don't know how or why... they just do. But the way I make them... They are HEAVENLY! So hopefully yours will turn out as heavenly as mine. :) Here is the recipe...

Ingredients:
2 pkg yeast
1/2 c luke warm water
1 1/2 cup luke warm milk
1/2 cup sugar
1 tsp salt
7-7 1/2 c flour
1/2 c soft butter
2 whole eggs

YEAST:
Combine the yeast and warm water with a sprinkling of sugar and let rise.

Separately:
Combine in a mixing bowl with dough hook, milk, sugar, salt, soft butter, and eggs. Then add the risen yeast mixture.

Begin mixing in flour - 1/2 c at a time (up to 7 1/2 cups if necessary) mix by hand

Place mixed dough into a buttered bowl, cover and let rise in warm area - 1 1/2 hours or double in size

Punch down, turn dough over in bowl and let rise another 1 1/2 hours or double in size.

Punch down, form into rolls, let rise on cookie sheet, brush with melted butter.

Bake in a 400F oven for 10-12 min or until brown.

Verdict...
HEAVENLY Rolls... I make these for all special occasions and when we want yummy rolls. I warm the milk, butter, sugar, and salt in a sauce pan on the stove just until the butter starts to melt. To help the milk be the proper temperature for the yeast to keep growing. :)

I also, brush them with more melted butter once they have been removed from the oven for added yumminess!
