Bourbon Sesame Chicken Crock Pot

Tonights dinner I found on tablefortwoblog.com but it called for honey and red pepper flakes. I didn't have either.  I also didn't want to cut an onion. I also changed the oil to sesame oil instead of regular veg oil. This should give it a nice nutty flavor. I have adjusted the recipe with my changes. I also doubled the recipe to feed my crew of growing boys. So these measurements can be cut in half to feed less people, or have smaller portions. With less chicken, you will also need to cut the cooking time in half. This dish smells delicious. Tonight I will take a picture and add it, since it's cooking right now. I also changed the name of this dish since I don't have any honey in it.  I'll write the verdict at the end of the recipe after dinner tonight. I hope you like this. Bourbon Sesame Chicken

Serves: 5-8 depending on appetite

Ingredients:
4 boneless skinless chicken breasts
salt and pepper
1 1/2 cup corn syrup
1 cup white sugar
1 cup soy sauce
1/2 cup ketchup
4 Tbsp sesame oil
2 Tbsp minced garlic
1/2 cup dry minced onion or 1 cup minced fresh onion
1/8 tsp cayenne pepper powder
Cornstarch
toasted sesame seeds

Directions:

Place chicken breasts in slow cooker, sprinkle with salt and pepper on both sides. In a medium bowl, combine rest of the ingredients except the cornstarch and toasted sesame seeds. Stir to combine well. Pour over the chicken in the crockpot.

Cook on low for high for 4-6 hours.

When done remove chicken from slow cooker, slice/cut up. while chicken is out of slow cooker, add cornstarch mixed with cold water to crockpot to thicken sauce a bit. Add cut up chicken back into the slow cooker stir around to coat chicken with sauce. Serve hot/warm over rice, or eat in a lettuce/cabbage wrap. 

Sprinkle sesame seeds on top of dished up chicken.

Everything but the kitchen sink chili

Today is going to be a long day for me. My oldest son is going on his first scout overnighter, I have a Girls Night Out... (yeah me!). I have to write one of my final papers for school, and the kids have a half day at school. Not to mention the house is messy and needs cleaning and laundry needs done. So I figured I needed a easy quick set it and forget it dinner. I pull out my trusty crock pot. Then I try to figure out what to put it it that is quick, easy and set it and forget it. I think that my cowboy stew would be nice and yummy. Then i remember i have leftovers from last night which was a raspberry vinaigrette pork loin. Which was just a low fat raspberry vinaigrette pored over a pork loin and cooked in the slow cooker all day. It was sweet, and tasty, lacked a little salt but other than that pretty good. So i figured I would try to make a chili of some sort without chili powder. Even if it is a sweet chili. Is there anything wrong with sweet chili... I don't think so. So I pull out my ingredients and away I go... Dump and stir then set it and forget it...

Ingredients:
2 cans chili beans
2 cans sweet corn
2 cups mixed sweet peppers, chopped/diced - I had orange, yellow and red
1 can tomato soup
1/2 cup bbq sauce
1 lb hamburger patties crumbled, browned with salt and pepper
leftover pork roast
1 onion chopped
1-2 cups of salsa medium
salt and pepper to taste

combine all ingredients in a slow cooker/crockpot for 8-10 hrs.

Serve with cornbread/corn chips with sour cream and cheese.

Bacon Wrapped Beef Roast with Homemade Mashed Potatoes













I decided to try something different with my beef roast today. I wanted to be a little fancy, since today is my oldest's birthday. I wanted it to feel like he was at a fancy restaurant. I decided to try a lattice weave with the bacon on top of the beef.

Ingredients:
1 beef roast
1 pkg bacon
steak seasoning salt
liquid smoke

Directions:
I dried off the outside of the beef, Then I sprinkled and rubbed in on all sides of the beef the seasoning salt, then started laying the bacon across the top of the beef. Once the beef was covered in the bacon I placed it in a roasting pan that was coated in olive oil. Then I put the lid on it and put it in a 325F oven for 3.5 hrs. Low and slow cooking it.

It came out like a nice beef brisket. It was pretty good, and the bacon came out nice and crispy. :) The kids said it was really yummy. The left overs will most likely be used as a pulled beef bbq. I hope you try this and enjoy.
