London Broil Sandwich with BBQ Mayo


After church today I wanted to make a nice lunch for the family, since church was from 11am-2pm. My husband and I didn't have breakfast, and then lunch would be late. So I wanted to have a quick filling lunch. I noticed that my london broil needed cooked. So I told him in about 20 min lunch would be ready... I wasn't kidding. It was a really, really, easy lunch and way yummy.

Ingredients
London Broil
McCormick Montreal Steak seasoning
lettuce
tomato
BBQ sauce
Mayo













Preheat the broiler.chris cross score both sides of the london broil. generously sprinkle the steak seasoning on all sides of the london broil and rub in. Place on broiling pan, and broil on high for 7 min on the first side, then flip and broil on hight for another 8 min for medium rare. Remove from broiler. Then let rest for 5 min.












While resting, mix equal parts mayo and bbq sauce. slice tomatoes, and rinse lettuce. On my rolls which are homemade, I toasted them on a griddle for added flavor and crunch.

This was an amazing sandwich. So yummy and quick. Just what the doctor ordered for us today. A hit all around. Enjoy!

Pineapple BBQ Meatballs

Tonight I wanted meatballs, but I had a feeling everyone is getting a little tired of the spaghetti sauce with our meal. We tend to do a lot of spaghetti sauce with our meals. So, I remembered back when my cousin Mimi got married, they had this sweet and sour type meatballs... Oh my, was it yummy. I remember pineapple and catalina dressing. I couldn't remember anything else. Well, I don't have any catalina dressing or pineapple, just pineapple juice. I thought I'd make my own version using BBq sauce and pineapple juice. I made some homemade bbq meatballs which is different than my normal meatball recipe. I'm trying to use what I have and add extra veggies to my kids meals. Since I blended and froze some of the veggies from making the chicken stock. (using it instead of throwing it away). I added two of my frozen "pucks" of minced mixed veggies. It has a ton of celery, carrots, onion and seasonings. I thawed them in the microwave to be able to use them.

Ingredients for BBQ Meatballs
1 lb ground beef
1 lb ground sausage
2 veggie pucks
3 tbsp minced onion
1 cup quick cooking oats
4 tbsp bbq sauce
2 eggs
2 tsp garlic sea salt

Mixed all together, balled and placed on a cookie sheet baked for 40 min in a 375F oven. Pulled off the hot cookie sheet into a sauce pan.

Pineapple BBQ sauce
1 -1 1/2 cup Famous Daves BBQ sauce
1-2 cups pineapple juice (to thin the BBQ sauce)

stir in a sauce pan, then add the meatballs from the oven, heat sauce with meatballs til boiling then lower heat and simmer.

This makes a nice sweet, tangy and with a little kick sauce and meatballs.

I am serving this over rice with a side of green peas. I had my taste tester (braeden) try one of the meatballs in the sauce and he said it was AWESOME!!! Best meatballs ever!

Steak salad with homemade croutons


Ok, so I tried something new tonight. I have never made homemade croutons before. I know that may sound funny. But it's true. I think they turned out pretty good.

My salad had the steak that I marinaded the other day, the recipe for the marinade is in a previous post. Then I broiled it for 5 min on each side. It was a flank steak. I let it rest for 5 min. Then sliced it into small pieces. I put the pieces over a salad mix and cucumbers. Then I cut up some homemade bread I had made last week that was getting a little stale, into small cubes. Then I put them in a single layer on a jelly roll pan. Drizzled it with olive oil to lightly coat the bread. Lightly tossed it to coat all bread pieces. Then I sprinkled a packet of ranch dressing on the bread cubes, then lightly tossed it to try to coat the bread. Then placed in a preheated oven at 400F. For 10 min then tossed and set it for another 10 min. They came out nice and toasty and yummy. I placed them on top of the salad and then I drizzled with a store bought BBQ sauce.

The verdict... SO TASTY... It was an amazing salad. I highly recommend it!
